Originally an Atkins recipe, or possibly from Cooking Light, I’ve made a few adjustments. This recipe can be made vegan and is kid-approved! Topped with salsa and sour cream, served with salad-this makes a satisfying and seasonal meal.
WOW! This recipe sounded silly to us but it is really good! Since we have to miss the rib cookoff due to asthma (from all the smoke), concessions were made… These sandwiches are packed with flavor-no barbecue grill needed. (FYI-we put the slow cooker outside on the patio in our new “summer kitchen” to keep things cool. Pics to come when I have time.) Have a great holiday!
Great for a nice weeknight dinner on the porch, this light yet flavorful fish is both Paleo AND 40-30-30. The mango relish also pairs well with chicken!
